Each ear of corn has an even number of rows โ always โ and the sweetness starts converting to starch the moment it's picked. That's why local sweet corn, sold the same day or day after harvest, tastes so much better than anything that's traveled across the country. Buy it the day you plan to eat it for the best flavor.

Tips for Buying & Storing
- Buy it the day you plan to eat it โ sugars convert to starch quickly after picking
- Don't husk it until right before cooking to preserve moisture
- Boil for 3โ4 minutes, grill in the husk for 15 minutes, or microwave 4 minutes
- Store unhusked in the refrigerator for 1โ2 days if not using immediately
- The silk should be brown and slightly dry at the tip โ a sign it's ripe
