Fresh cucumbers from the farmers market arrive in mid-July and are crisp, cool, and refreshing in summer heat. Two main types show up at local markets: slicing cucumbers (long and smooth, for eating fresh) and pickling cucumbers (short and bumpy, better for quick pickles). Both are excellent raw. Local cucumbers haven't been waxed for shelf life, so the skin is more tender and edible than grocery store cucumbers.

Tips for Buying & Storing
- No need to peel local cucumbers โ the skin is tender and unwaxed
- Store at room temperature for 1โ2 days, or in the warmest part of the refrigerator
- Slice and salt for 20 minutes to draw out excess moisture before using in salads
- Make quick refrigerator pickles: cucumbers, vinegar, salt, sugar, dill โ ready in an hour
- Avoid storing near tomatoes or apples โ ethylene gas makes them bitter faster
