Zucchini

๐Ÿ“… In season: Mid-July through September

About Zucchini

Zucchini is one of summer's most abundant crops โ€” it grows so fast that farmers often joke they can't give it away in August. That abundance works in your favor at the market, where it's plentiful and inexpensive. Best when picked small (under 8 inches), zucchini is mild, versatile, and quick-cooking. It comes in green, yellow, and striped varieties, all of which taste similar. Available from mid-July through September.

Nutrition Highlights

  • Good source of vitamins C and B6
  • High in water content โ€” very low in calories
  • Good source of potassium and manganese
  • Contains antioxidants including lutein and zeaxanthin

Tips for Buying & Storing

  • Buy smaller zucchini โ€” under 8 inches are more tender and flavorful
  • Grate and squeeze out moisture for baking (muffins, bread, fritters)
  • Slice and grill at high heat for a quick summer side
  • Don't peel it โ€” the skin is tender and nutritious
  • Store in the refrigerator crisper drawer for up to a week
